1 cup watermelon, cubed
2 tbsp. SoGreen Salsa Verde
1 tbsp. olive oil
1/2 cup feta, or goat cheese, crumbled
- fresh scallions, diced
- Mix together watermelon, SoGreen Salsa Verde, olive oil, and half of the cheese.
- Add salt to taste.
- Garnish the salad with the other half of the cheese, freshly diced scallions, and fresh cracked pepper.
