Sidekicks Shrimp Ceviche

Recipe

Ingredients:

  • 5 oz. raw shrimp, diced

  • 3 tbsp. Sidekicks Salsa Verde

  • 1 ½ tsp. salt

  • ¼ cup lime juice

  • 1 red pepper, roasted, diced

  • 1 tbsp. olive oil

  • Cilantro

Instructions:

  1. Mix all ingredients in a (preferably) stainless steel bowl. Let it sit in your refrigerator overnight.

  2. The next day, remove the shrimp, roasted peppers, and salsa from the liquid with a slotted spoon.

  3. Plate, top with cilantro and serve.
