Tomato Paste10 ounces Sidekicks Salsa Extra Hot1/2 cup Rice (uncooked)1 cup Water1 cup Kidney Beans (precooked)Shredded CheeseSidekicks Salsa VerdeSour CreamYour Favorite Hot SauceInstructions:Sauté onion, poblano, scallion whites in olive oil and butter until soft and tender.Once tender, add paprika, cumin, garlic powder, oregano, tomato paste, Sidekicks Extra Hot Salsa, rice, and water.Stir and let simmer.Bake in oven at 350 degrees for 15-20 minutes.Remove from oven and add kidney beans and mix.Transfer to casserole dish and add shredded cheese on top.Put back in the oven at 350 degrees for a couple minutes, or until cheese melts.Once melted, remove from oven and add a mixture of last 3 ingredients on top.Garnish with scallion greens.
