Sidekicks Vegetarian Chili

Recipe

Ingredients:

  • 1 Small Onion

  • 1 Poblano Pepper

  • 2 Scallions

  • Butter

  • Olive oil

  • Paprika

  • Cumin

  • Garlic Powder

  • Oregano

  • 2 tbsp. Tomato Paste

  • 10 ounces Sidekicks Salsa Extra Hot

  • 1/2 cup Rice (uncooked)

  • 1 cup Water

  • 1 cup Kidney Beans (precooked)

  • Shredded Cheese

  • Sidekicks Salsa Verde

  • Sour Cream

  • Your Favorite Hot Sauce

Instructions:

  1. Sauté onion, poblano, scallion whites in olive oil and butter until soft and tender.

  2. Once tender, add paprika, cumin, garlic powder, oregano, tomato paste, Sidekicks Extra Hot Salsa, rice, and water.

  3. Stir and let simmer.

  4. Bake in oven at 350 degrees for 15-20 minutes.

  5. Remove from oven and add kidney beans and mix.

  6. Transfer to casserole dish and add shredded cheese on top.

  7. Put back in the oven at 350 degrees for a couple minutes, or until cheese melts.

  8. Once melted, remove from oven and add a mixture of last 3 ingredients on top.

  9. Garnish with scallion greens.
